Hi! I have used many of the recipes listed here and have had much
success with them. This one is in response to the request for chicken
cordon bleu which I make very simply but my kids love it.

Ingredients: boneless chicken breasts (I usually use 1/2 breast per
             person,normally sold in packages of two breasts)
             Progresso Italian bread crumbs
             Imported Ham 
             American,Swiss,Provolone or your favorite cheese
             1 egg with a little milk
             flour,salt and pepper
             toothpicks or small skewers
             oil
             water
Directions:  In three separate bowls place:
             a)about 2 cups of flour with a tsp. of salt and pepper mixed
             b)the egg with about 1/4 cup milk mixed in
             c)about 2 cups of the bread crumbs

With a sharp knife cut the breasts in half, and using a mallet pound
them until they are about an 1/8 of an inch in thickness.Place a piece
of the ham and cheese in each piece of chicken and roll up from the
smaller end to the larger end. I usually place a toothpick in each one
to keep them from opening, but you don't have to.Then take each piece
and roll it in the flour,then the egg mixture, and then the bread
crumbs. In a large saucepan that you can cover, put a little oil to
cover the bottom, heat for a minute, then place the chicken in and
brown on all sides,approx.5-6 minutes.Add water covering the chicken
about 1/2 way, cover and simmer for 45 minutes.It makes a cheese sauce
as it cooks so the more cheese you add, the better. You can also make
this in the oven by browning the chicken on the stove, then placing in
a baking dish at 350 degrees for 30-45 minutes. There are many ways
that you can vary this dish by adding all different types of veggies or
meats, try using broccoli and butter inside and serve with rice pilaf.
