I discovered this in the Chinese Laundry Cafe, in Kingston Canada. Ingredients: Lots of feta cheese, cubed for the blender A clove of garlic (or less), chopped up An ounce or two of water, if feta is dry Optional: your favorite herbs Put the garlic in the blender, run on high, and add water until the mixture is about the thickness of thick pancake batter (you should not need much water unless the cheese is dried out). Add at most one clove of garlic for every 500g (about 1lb) of feta, and blend it in. Put the mixture into a container and refrigerate. It should be about the consistency of spreadable cream cheese. Garnish with your favourite herbs if desired (at the Chinese Laundry it is called _herbed_ feta and garlic pate), and serve with crackers or crusty Italian bread. Easy, cheap, and delicious. David
