This is the Pizza dough recipe I use. It is very easy, however I have never frozen it so if you try it let me know how it went. For a large Pizza: 3 cups of flour: There are a number of variations of dough... 3 cups whole-wheat Half and half 1.5 cups white 1.5 cups whole wheat 2 cups flour 1 cup corn-meal (Very heavy crust but a nice change) 1 Teasp salt 1 package yeast 2 oz. veg oil 2 Table spoons sugar (for yeast, sorry I don't know if there is another way) -Put all flour into large bowl -add salt and mix -In a separate small metal or glass bowl add sugar to 1 cup hot water, dissolve.-Add the pouch of dry yeast and stir very well. -after yeast is dissolved add the oil to the water/yeast mix and stir. -pour water/yeast into flour and stir in with fork. -after this use your hands and knead thoroughly until there are no lumps or dry spots on the dough. If you have a very large bowl or cutting board, strongly throwing the dough ball repeatedly into the bowl is a good method. -after the dough is needed, place back in bowl and let rise for 20-25 mins. That's it you have pizza dough. PIZZA TIPS -Don't roll dough out. Just hold the dough in the air and swing your arm a little. The weight of the dough will stretch itself out. With practice it becomes quite easy to shape the dough to the shape the pan or stone. -Use a cookie sheet if you don't have an oven brick or stone. NEVER use a foil pan, the results are horrible. -Basic pizza sauce is Tomato Paste + spices. Why buy "pizza sauce" in a jar. try this... tomato paste+sweet Basil+oregano. -Place your cheese next to the crust then your sauce. I find it accents the crust a little better. -ONIONS,ONIONS,ONIONS...the more the better. -Try this for a meaty twist....Lamb sausage. -Try a more basic approach to the pizza, say just 2 ingredients. -Cheese is not compulsory. Thanks, whoever, for the "White Pizza" and "5 Cheese" I will try them both soon. Bill Kyle.
