Here is a very easy recipe for coconut custard (flan de coco) as
appears in "Success with your microwave" by Awilda Arenas de Pla.  It
is sweet and delicious, and very easy to make.

5 egg yolk
3 whole eggs
one 8.5 oz can of cream of coconut (like the one used for pina 
coladas, it's like coconut condensed milk)
one 12oz can evaporated milk
1 cup of sugar
a pinch of salt

Beat eggs while adding slowly the cream of coconut, milk, sugar, and
salt. Beat until well mixed, trying not to make too much bubbles.  If
you get any bubbles, let it rest while you make the caramel, so the air
can escape from the mix.

Make caramel as indicated below.

Pour mix in caramel-coated pan and microwave at 50% (medium in a 700
watt mw oven) for 10-15 min.  It's done when it looks cooked and is no
longer liquid.

Place in the refrigerator and wait until is cold before turning over.

Caramel-
1 cup sugar
3 tbs of water

Place sugar and water in a microwave proof bowl. Microwave for 5 min.
If you like a darker caramel, keep microwaving at 30 sec intervals
until it achieves the desired color.  Pour in greased pan and wait
until it hardens before pouring the mix.
