Chicken Fried Rice: (1 serving)

Ingredients: 1/4# deboned/skinned chicken, 1 cup cooked rice,
             1 egg, garlic, ginger, scallion, salt, pepper,
             soy sauce, sherry, wine vinegar

Recipe:  -Beat egg w/ salt & pepper, cook briefly w/ 1 t oil,
          should still be a little runny
         -Cut chicken in bite size pieces, cook over high heat
          w/ 2-3 T oil & garlic/ginger (1/2 t each) and scallion
          (1 T).
         -when chicken is done, add cooked egg, 1 T soy sauce, 1 t
          sherry, and 1 t wine vinegar, cook briefly


Chicken Parmesan: (1 serving)

Ingredients: 1/4# deboned/skinned chicken breast, 1 cup spaghetti
             sauce, parmesan cheese, mozzarella cheese

Recipe:  pour sauce into small covered casserole dish, put in chicken,
         sprinkle 2-3 T parmesan cheese on top, sprinkle 3-4 oz mozzarella
         cheese on top, bake at 350 for 40 minutes.  Goes great w/
         brown rice.



                    cook in 3-4 T oil w/ chopped garlic, ginger,
                    scallion, when done remove
                    beat 1 egg w/ some salt/pepper, cook briefly
                    should be a little runny
