My wife and I had a wonderful salmon mousse as an appetizer at a hotel in Atlanta several years ago. Since then, we've been looking for a recipe that approximates it. The closest we've come to it is a salmon spread that is made with salmon and cream cheese, but it's much heavier than the mousse we had in Atlanta. Any good recipes out there? Thanks.
