I wonder whether anyone (Dutch readers especially) could supply me with the recipe for oliebollen? For those who don't know, these are a kind of spherical Dutch pancake, made by dropping batter into a vat of hot oil, so that the outside solidifies and leaves the inside semi-liquid. The batter can contain various, usually fruit, additions: typically apple and raisin. The literal translation, somewhat unexcitingly, is oil-balls. I have seen them made by a Dutch friend of mine, but I don't know the exact composition or timings. (In Holland, you can get packets of oliebollen mix, but of course not in England). My friend was to be making them for a party on Sunday, but he can't be here, so I'll take over if I can discover the recipe. Thanks Jocelyn Paine
