SOURDOUGH PANCAKES 2 1/2 C. flour 1 t. salt 2 C. warm water 1 t. soda 1/2 t. dry yeast 1 T. sugar 2 eggs 2 T. melted shortening, bacon grease, or oil The night before: 1. Mix flour, water, and yeast in a 2 qt. bowl. 2. Cover and place in a moderately warm place overnight. Note: Instead of setting the sourdough up the night before, I have used a teaspoon of yeast instead of a half teaspoon, covered the bowl, and microwaved at level 1 for 15 minutes, and let stand for 15 while I'm getting the rest of the ingredients out. The next morning: 3. If you wish to start a true sourdough, remove a half cup of the starter and refrigerate in a covered jar. Use this starter next time instead of the yeast. 4. Otherwise, add the rest of the ingredients (after which it is too late to take a starter), cook, and enjoy.
