Annice, my wife found a good twice baked potato recipe in one of our Weight Watchers Cookbooks. Here goes: Twice Baked Potato 2 tsp margarine 1/4 cup each finely chopped mushrooms and scallions (green onions) 2 oz Gouda, Swiss or Cheddar cheese, shredded 1 Tbsp chopped fresh parsley or 1 tsp parsley flakes 1/4 tsp salt Dash white pepper 1 baked potato (6 ounces) In a small skillet heat margarine until bubbly and hot; add mushrooms and scallions and saute until vegetables are tender. Remove from heat and stir in cheese, parsley, salt and pepper; set aside. Cut potato in half lengthwise. Scoop out pulp from potato halves, leaving about 1/4 inch thick shells. Combine potato pulp with cheese mixture; spoon half of mixture into each reserved shell. Set stuffed potato halfs on non-stick baking sheet and broil until potato is thoroughly heated and browned, 5 to 8 minutes. Makes two servings. Per serving: 234 calories; 9 grams protein; 12 grams fat; 23 grams carbohydrate; 221 mg calcium; 555 mg sodium; 32 mg cholesterol These are quite good. Let me know if you like them. Bill Crews
