Ricetta del "risotto giallo con funghi" Autrici: Chiara Frascotti e Francesca Campanini ingredienti per 4 persone: 3,5 hg. di riso mezza cipolla bianca un bicchiere di vino bianco secco 20 gr. di burro 2 cucchiai d'olio d'oliva 1 litro di brodo di carne (manzo, pollo e verdure) 1 midollo sale 20 gr. di porcini (funghi) secchi mezzo cucchiaino di zafferano parmigiano grattuggiato Far ammollare i funghi secchi nell'acqua tiepida per 15 minuti. affettare finemente la cipolla e soffriggerla con il burro l'olio e il midollo in una pentola alta. Quando la cipolla e` imbiondita, aggiungere i funghi tagliati a pezzi e il riso e farlo tostare. Aggiungere il vino bianco e farlo evaporare. Sempre mescolando con un cucchiaio di legno, aggiungere gradualmente il brodo caldo e continuare finche` il riso e` cotto (20-25 minuti). Quando il riso e` cotto, aggiungere lo zafferano e mescolare energicamente. Cospargere con abbondante parmigiano grattuggiato e servire ben caldo. Buon appetito. =============================================================================== Authentic Italian Recipe for "Risotto Giallo con Funghi" Cooperative Work of: Chiara Frascotti and Francesca Campanini Translation by: Joe Giampapa Ingredients: (serves 4) 350grams rice 0.5 white onion (medium size) 1 cup dry white wine (ie. Pinot Grigio) 20grams butter 2 tablespoons olive oil 1 liter of special broth: made with beef, chicken, celery, potatoes, carrots (if desired, beef and chicken boullion may be substituted for the real thing) 1 piece of beef bone marrow (optional) Salt to taste 20 grams dry porcini mushrooms 0.5 teaspoon saffron 1 cup grated Parmigiano cheese Soak the dry porcini mushrooms in warm water for 15 minutes. Finely chop the onion and fry it in the butter, olive oil, and beef bone marrow (if used), in a tall pan. When the onion is browned (not burned!), add the chopped mushrooms and rice. Lightly brown the mixture, for approximately 2 minutes, constantly stirring it. Add the white wine, and evaporate (constantly stirring, or that it does not stick to the bottom of the pan). Always stirring with a wooden spoon or spatula, gradually add the hot broth. Be attentive to not add too much broth, but enough to maintain a pasty consistncy. Continue to mix until the rice is cooked (approximately 20-25 minutes). When the rice is cooked, add the saffron and vigorously mix until the saffron is evenly distributed. Generously sprinkle with grated Parmigiano, and serve hot. Buon appetito.
