Since I Okra is just about the best vegetable ever! You can use it as a substitute for green beans with a couple of caveats: 1. DO NOT OVERCOOK!! Okra is best if it is just blanched that way it is still crispy. Overcooked okra is a slimy inedible mess. 2. DO FRY!! Breaded fried okra is fantastic. My Favorite Okra Recipe: Spicy okra and tomatoes 1 lb okra 1 lb tomatoes several jalapenos 1 small onion 1-2 tblsp olive oil 2 cloves of garlic Heat the oil in a frying pan over medium heat, chop and add the garlic. Cook for a couple of minutes until the garlic is sizzling. Chop and add the onion and cook until the onion is transparent, do not allow the onion to brown (you can cover the pan to avoid this). Wash the okra and chop off the stem then dry on paper towels. Chop (and peel optional) the tomatoes, then clean and chop the jalapenos. Turn up the heat on the pan to medium high and cook uncovered for a minute to remove any excess moisture. Toss in the okra, cook for a couple of minutes then add the tomatoes and jalapenos. Stir and cook for just a few more minutes until the okra begins to lose its rigidity and the tomatoes soften. This is basically a stir-fry/tex-mex okra dish but its great. enjoy!
