A frequent, if unimaginative, standby in our house is fried tofu chunks with spinach on brown rice. You fry the tofu chunks briefly in the frying pan, then add the washed spinach and cook for just a couple of minutes more, covered. For some reason we always put toasted sesame seeds on top. Even the kids will eat it. Season with Tamari at the table. Also, you can put tofu instead of meat in chili. Lucy Quimby
