Spinach Fettucini Alfredo

3 pkgs fresh spinach fettucini (each package serves 2)
1 bunch fresh brocolli
1/2 head cauliflower
4 carrots sliced
4 boneless skinless chicken breasts
2-3 cups Alfredo sauce
8 oz swiss cheese (shredded)

Slice the chicken up in bite size pieces.  Brown in a little margarine
and set aside.  Steam the vegetables.  Cook the fettucini until firm (a
little less time than is called for on the package) and drain.  Toss
fettucini, chicken, and vegetables in a 9x13 pan.  Pour Alfredo Sauce
over and mix.  Top with shredded cheese.  Bake in 375 degree over for
20 to 30 minutes (until cheese is melted and bubbly).

I'm doing this from memory so the measurements are somewhat
approximate.  This will serve 6-8 people.  For the Alfredo sauce, I
usually buy the dry packaged kind and mix.  I usually use two packages
of the mix.  If fresh spinach fettucini isn't available, I used the
packaged kind and it works ok.
