I know this has onions in it but I think you'll like it:

4 Medium Russets, Peeled and sliced thinly
1 medium onion, chopped
2 Tbl Butter
1/2 Pint cream or half 'n half 
1/2 Lb cheddar, grated
3 Tbls flour 

Saute onion in butter until golden. Add cream and boil until thickened
to the point where it coats a spoon. Remove sauce from heat and add two
large handfuls of cheese and stir until melted. Put 1/3 of potatoes
into a casserole in a layer. Pour 1/3 of sauce over potatoes and
sprinkle a tbl of flour over it. Repeat layer of potatoes, sauce, and
flour two times.  Bake for about 55 minutes at 350 degrees or until
potatoes seem tender.  top dish with a generous amount of cheese and
return to oven until melted and slightly browned
