[rec.food.recipes] BEEF: Dump Casserole

Steinar.Haug@elab-runit.sintef.no (Steinar Haug) (03/08/91)

this is something new that we made last weekend when trying to clean
out the pantry a little. the main ingredients are some of our favorite
foods, so we usually have them on hand.

1/2-3/4 lb. ground beef (we used 1/3 kilo, for the other europe-based folks)
1 can corn
1 can tomatoes
4 servings of macaroni
any mild to medium hard cheese. we used the local variant of cheddar, which
is slightly milder than the u.s. variety.

cook the ground beef and macaroni as you usually do. dump the tomatoes
in the bottom of a large casserole dish (2 quart/liter). cut up any
large pieces. drain the can of corn and dump that in the bottom.
drain the fat from the beef and dump that in. drain the macaroni and
dump that in. cut up some of the cheese into small cubes. use whatever
amount seems appropriate. stir all this up carefully. grate a little
more of the cheese and sprinkle it on top. bake at 350F/175C for about
30 minutes.

when i was growing up we used to call casseroles of this sort "mommy's
working late"-dinners. in other words, simple to fix, throw it in the
oven and forget about it for a while.
