Ingredients: White bread thin slices of cucumber (English cucumbers are best, but you can make do with regular cucumbers) malt vinegar butter cream cheese Marinate the cucumber slices in vinegar for about 30 minutes. Remove the crusts from the bread slices. Cut into your favorite shapes. (I usually just cut them in squares). For each sandwich, butter one side of one slice of bread, and spread cream cheese on the other. (Keep these spreads *very* light.) Place a couple of slices of the marinated cucumber between the bread slices. **NOTES: I have used balsamic vinegar instead of malt, which I personally prefer, although I'm told it's not authentic. I have also buttered both slices of bread instead of 1 with butter and 1 with cream cheese. This is also tasty. Given that I'm not from the UK, I don't know how authentic this is, but it's great fun to serve. (Get the kids involved with teas at an early age - cut the sandwiches into fun shapes!) Robin Rosenberg
