I'm looking for good recipes for Chili. If you have one you like or are particularly proud of, please send it to me at the address below. If anyone else is interested, I'll be happy to mail or post the replies I receive. [ There have been many many chili recipes posted, in particular check out rec.food.recipes digests 2,24,44,70,73,76,77. Digests are available by ftp from wuarchive.wustl.edu -aem] To get it started, here's one I got out of the newspaper several years ago. I think it's pretty good, but those of you who think adding beans to chili is sinful won't (I like it both ways). I believe the recipe comes from an eatery somewhere in NYC. It's called "The Riviera Cafe's Chili". Enjoy! The Riviera Cafe's Chili (serves 12) 4 pounds lean, coarsely ground chuck 1 pound onions, chopped 4 stalks celery, chopped 1/4 ounce garlic salt 1 1/2 ounces fresh jalapeno peppers, chopped 1 12 ounce can tomato puree 1 large green pepper, chopped 1/2 bottle Heinz chili sauce 2 cubes beef bouillon 2 tablespoons cumin 2 teaspoons oregano 2-4 tablespoons chili powder 4 cups kidney beans Saute the beef. Place all ingredients in a large pot and bring to a boil. Reduce heat and simmer for an hour or longer. The longer it cooks, the thicker it becomes. Roger A. Cornelius rac@sherpa.UUCP uunet!sherpa!rac
