I had great success with the soft pretzel recipe recently posted. Because it calls for boiling before baking, it made me think of bagels which, I believe, use the same technique. No one has, to my knowledge, ever posted bagel recipes. The difference between great and okay bagels is night and day so I am willing to put in the effort. I promise to try and report results. Why, btw, do you boil them (and pretzels)? Also, I hope to get advice on how to make variations like onion, garlic, pumpernickel, poppy and raisin. i'm looking for a decent bagel recipe, one that makes bagels with nice crusts. the recipe i have makes wimpy things like you get out of the super market freezer. recipes with onion and/or garlic in them would be especially nice, but i'm willing to experiment with sticking that in myself. thanks a lot! -cindy kandolf cindy@solan.unit.no trondheim, norway [ In digest 73 warren contributed a vegan recipe for bagels... -aem]
