a friend and i had to cook for some depressed people. we ended up with this fairly easy, quite tasty, and very decadent dish. an alternative to drowning sorrows in ice cream... 1-2 lb pasta 1 pkg frozen peas (or you can stand around shelling fresh ones), i guess 10 oz 10 oz fresh spinach 1 large onion a cup or two sliced mushrooms 1 pint light cream a stick of butter 1 package bacon grated parmesan (4 oz? maybe a little more) while the pasta cooks, cut the bacon into 1 or 2 inch pieces and fry until cooked but not crisping yet. drain the grease and transfer the bacon to paper towels. saute the onion (we just used a little of the bacon grease but butter is good too) till translucent, then the mushrooms and the spinach until the spinach is all wilted. melt the butter in the cream. drain the pasta, toss in a bowl with the vegetables and cream. (we just threw the peas in and let them thaw in the pasta). add the parmesan last and toss again. you can reheat it in the oven just before serving if you prepared it ahead of time.
