I usually put milk in large ""heavy"" pot and let it come to an almost
boiling - I mix the flour, sugar, some of the cold milk and then add
the egg yolks.  When the milk is hot I pour about 2 cups of it into the
flour,sugar,egg,milk mixture and then pour it into the pot with the
remaining milk.  Then stir constantly until thick.  Add butter, salt,
and vanilla.  Let cool.  Then add either bananas, or coconut.... or
just leave it plain....  Make sure the product is cool when you add the
bananas or it will SOUR them....  If you want you can beat the egg
whites, adding about 1/4 cup sugar to them and then put on top of the
cream filling and put in ``hot'' oven and let bake until meringue is
light brown.  I usually whip cream for my pies and freeze the egg
whites.  Enjoy!!!!
