I got this recipe from a friend, who got it from a cookbook called `The
Easy Gourmet'.  It's absurdly easy, wonderfully tasty, and very
colourful.  Great for dinner parties and such.  Enjoy!

Indonesian Chicken (a.k.a. Chicken thighs with peanut sauce)

6 chicken thighs
10oz can of chicken broth/stock 
2 tbsp crunchy peanut butter       (don't substitute smooth - it just isn't the same)
2 tbsp oil                         (not really necessary)
2 green onions, chopped
2 tomatoes, seeded and chopped     
1 clove of garlic, crushed
pinch cayenne pepper, or to taste

Heat oven to 350 degrees Farenheit.  Grease a shallow baking dish, and
place chicken in it.  Mix together the remaining ingredients, and pour
over the chicken.  Bake until chicken is cooked, and the sauce is
bubbling, approx. 40 minutes.  Baste once or twice during the baking.
Serve over rice.

Serves 3 - but adaptable as necessary.

Don't be put off by the way the sauce looks before cooking....
