banana nut bread (makes one loaf) 3 ripe bananas (ones with the brown dots) if they are the _real_ small bananas, use 4 2 eggs, lightly beaten 3/4 c. sugar 2 c. flour 1 tsp. baking soda 2 tsp. pumpkin pie spice or 2 tsp. cinnamon. (optional) (i usually add more than 2 tsp.) 1/2 c. nuts (optional) mash bananas. add eggs and sugar. mix dry ingredients together in another bowl (including spices, if used). add dry ingredients to banana mixture. if using nuts, add now. pour into a greased loaf pan. bake in at 350 F. for one hour. this is very easy to make, and i get compliments _every_ time i make it. it is a good recipe to start out young bakers on. good served warm, also good served cold... yum, yum!!! i also like it because it contains no oil like some of the vegetable breads... pauline
