Here's a great Banana Bread recipe that I have used successfully for years.

Ingredients:
4 oz.margarine or butter
1+1/4 cup brown or white sugar
2 eggs
2 cups flour
1+1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup or 3 bananas - mashed
2 to 3 tablespoons sour cream
1 cup pecan or walnuts
a few more nuts to decorate

Method:
1. Heat oven: 300 deg.
2. Grease either a large loaf tin or an 8" by 11" baking tin.
3. Beat margarine and sugar till fluffy white.
4. Beat in the eggs.
5. Mix flour, B.P and B.S. together. Add to the above mixture.
6. Add bananas and sour cream. Blend in gently.
7. Fold in the nuts.
8. Pour into the baking tin and bake for 60/70 mins.
9. Let the loaf cool well before slicing. Don't forget to decorate with some
nuts.

Notes:
I have tried mixing different nuts or use one kind alone. My favorites
are the above and cashew nuts, used on their own or mixed.

2 cups    Flour                   Bake 375 degrees for approx. 50min.
1/2 cup   Butter or Margarine
1 1/3cup  Sugar
1/2 cup   Buttermilk (This is important)
1 cup     Bananas (Mashed)
2         Eggs
1 tsp     Baking Powder
1 tsp     Baking Soda
1 tsp     Vanilla
1/2 cup   Nuts (Opt)
          Salt (I don't use very much - 1/2t)

Cream butter and sugar then add eggs, buttermilk, add flour with BP,BS,
salt.  Add rest of ingredients...  I have thrown the whole mess
together and it still comes out good.  This is probably one of the best
quick breads that I have ever made.  I also have used apples for the
bananas and it is good that way.  It's just a good basic quick bread
recipe.  I can't remember if this makes two loaves or one.  I usually
use the little bread pans and it makes several of those.  It freezes
very well.

This recipe has been around the house since 1938.  You might like to try it.

l/2 cup shortening
1 cup sugar
2 eggs
1 cup ripe mashed bananas
1 tsp of lemon juice
2 cups all purpose flour
3 tsp. baking powder
1/2 tsp salt
1 cup chopped nuts (we use walnuts)
9"x5" loaf pan; (1) oven; (1) oven thermometer

Cream shortening & sugar very well.  Add eggs one at a time, beating
until light & fluffy. Mash bananas & press through sieve then add
lemon juice (to keeps bananas from turning black). Beat into the
creamed mixture. Add nuts. Grease a 9x 5 pan. Bake at 350 degrees for
about l.25 hours.  Makes (1) loaf.

Hope you enjoy it.  (you can add some powdered sugar to the top - that's nice).
