In response to your request for a peanut brittle recipe, here's one that comes from a good friend of ours (requires a microwave oven): Peanut Brittle (1 pound) 1 cup sugar 1 tsp. butter 1/2 cup corn syrup 1 tsp. baking soda 1 cup roasted peanuts In 1 1/2 quart casserole dish, stir together sugar and syrup. Microwave at high, for 4 minutes. Stir in peanuts. Microwave at high, 3-5 minutes. Add butter and vanilla (our friend didn't say exactly how much, you will need to experiment with this) -- blend well. Microwave at high, 1-2 minutes. Add baking soda (sprinkle to cover top), and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet. Cool 1/2 to 1 hour. When cool break into small pieces and store in air tight container.
