Hi - OK, for all of you who sent me mail asking for the recipe for Mama's Quiche, here it is: (Sorry it took me so long, but the recipe was in St. Louis, and I was in Urbana, IL) 1 egg 8 oz. crab meat 4t flour 1 T finely chopped green onion 1/2 C mayonnaise 9-inch pie shell (pre-baked) 1/2 C milk 8 oz. Gruyere or other cheese Beat egg with a whisk; blend in flour; blend in mayonnaise and milk. Fold in cheese, crab and onion. Fill shell. Bake 45 minutes at 350. NOTE - I mentioned this recipe in a response to what to do with fiddleheads, because you can substitute whatever filling you want, just keeping the egg, mayo, flour and milk the same. Jeff Sidell
