Is there any documentation on how to contol page size, setup, etc for the seiko printer filters ? There should at least be a man page! You didn't mention which release of the Seiko driver you were running, but the Seiko 2.0 driver has the features that you are requesting. Both the hardcopy manual and the online release notes document the features. You may want to check if you are running an older release of the software (Version 1.0).
