How do I change the text in a field to constant pitch  (i.e. every character
occupies the same space, like a line printer of yore)?

Use a monospaced font.

One that shipped with your Macintosh is Monaco.  Another that comes with the
LaserWriter [and would be available from an owner of one] is Courier.

Several font vendors have others available.
