CRANB-COOKIES(D) USENET Cookbook CRANB-COOKIES(D) CRANBERY-APPLE COOKIES CRANB-COOKIES - Moist cookies with cranberries, apples, and cinnamon Many years ago one of my brothers complained to me that he didn't like cookies much, that they were always too dry and pasty. I came up with this recipe for him. He still doesn't like cookies, but the recipe has made its way to various other people to become a favorite. INGREDIENTS (Makes 4 dozen) 1/2 cup butter 1 cup brown sugar 3/4 cup sugar 1 egg 1/4 cup milk 2 cups flour 1 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1 tsp grated orange rind 1 1/2 cups apples, pared and chopped 1 cup cranberries, chopped PROCEDURE (1) Preheat oven to 375 deg. F. (2) Cream butter and sugars; beat in egg and milk. (3) Sift together flour, baking powder, cinnamon, and salt. Stir into butter mixture until well- blended. (4) Stir in orange rind, apple, and cranberries. drop onto baking sheets. (5) Bake for 12-15 minutes at 375 deg. F. NOTES Don't store these in a cookie jar: they will get too mushy. RATING Difficulty: easy. Time: 15 minutes preparation, 15 minutes baking. Precision: measure the ingredients.
