This recipe could be used as part of a 12 course meal known in Polish as
Wigilia, or on its own.  Wigilia is eaten after sundown on Christmas Eve.

.IG "3 cups" "cooked or canned beets," "600 g"
sliced
.IG "1 Tbsp" "fresh horseradish," "15 ml"
grated (or use 
.AB "4 tsp" "20 ml"
prepared horseradish)

caraway seed)
.IG "2 cups" "vinegar" "500 ml"
.IG "1 Tbsp" "brown sugar" "20 g"

Layer beets in a glass or earthenware bowl, sprinkling layers with horseradish
and cloves.

Boil vinegar with sugar and salt 2 minutes.  Pour over the beets.  Cover and
refrigerate for 24 hours.
