This recipe could be used as part of a 12 course meal known in Polish as
Wigilia, or on its own.  Wigilia is eaten after sundown on Christmas Eve.

.IG "5 cups" "milk" "1.2 l"
.IG "\(12 lb" "blanched almonds," "250 g"
finely ground
.IG "1 tsp" "almond extract" "5 ml"
.IG "2 cups" "cooked rice" "300 g"
.IG "1/3 cup" "sugar" "60 g"
.IG "\(14 cup" "raisins or currants" "40 g"

Heat milk just to simmerring in a large saucepan.

Add all the ingredients; stir until well mixed.  Cook over low
heat 3 to 5 minutes.

Serve hot as is traditional for Christmas, or chill before serving.
