Hi, all. I've got a parallel Centronics printer (Epson mx-80) and a terminal
with an Auxilary (serial port) which I'd like to marry. Does someone out
there have a serial-parallel port schematic (Yea, I know it's simple)?

A UART and few gates should solve your problem.
Use a UART, which does not require a CPU for it's setup - such
as 6402 for example.
The receiver output is your parallel port; extra gates will provide
Centronics strobes.
