I want to use the X11 fonts for a project that I am not going to be using
X11 for (i.e. we won't be using the X11 library font functions). Where do I
find the font file format in the X11 documentation? .....or do I have just
have to browse around the source.

Source format (BDF) documentation can be found in R3 in doc/bdf/* (or in hardcopy/bdf/bdf.PS.Z). Binary format (SNF) documentation is a little harder to come by; there is some discussion in doc/Server/ddx.tbl.ms, but you may be better off perusing the source to the compiler, in fonts/bdftosnf/*.
