Below is a pumpkin soup recipe which I've made a number of times, both for customers and guests (I am a caterer). It ssounds a bit strange, but it's delicious! PUMPKIN SOUP 6 slices bacon, cooked crisp and diced, fat reserved 1/2 stick sweet butter 6 cups peeled cut-up pumpkin (1 inch pieces) 6 cups beef stock or beef broth 1/2 cup Marsala 1 tsp. dried thyme salt and pepper to taste toasted pumpkin seeds to garnish Heat bacon fat and butter in stock pot over medium heat. Add pumpkin ans saute for 15 minutes. Pour in stock and simmer covered for about 30 minutes. Remove from heat. Add Marsala, thyme, salt and pepper. Process until smooth. Serve immediately, garnished with pumpkin seeds.
