My recommendation is either Mirror III (pretty much a clone of
Crosstalk, but  actually more flexible) or Procomm Plus.  Mirror is
a product of Softklone, and is available for less than $100 US.
Mirror allows remote dial-ins to a shell and allows custom
functions to be set up with a very powerful scripting language,
Prism.  Prism comes very colse to allowing you to set up a complete
BBS system, if you want.  Mirror also has a host-based MNP error
correction product that I like very much.  The MNP product is sold
as an add-in program to work with the basic Mirror III package.

Procomm Plus started life has a share-ware  product, but is now
available commercially.  Procomm is very easy to set up and use and
and has quite colorful menus.  As with Mirror, Procomm allows
remote access to DOS shells via modem dial in.  Procomm also offers
a relatively easy to use scripting language, but with less power
than Mirror's Prism.  Procomm also sells for well under $100 US.
