		Cabbage    Conconction (South Indian Style)

This is an amazingly simple and very tasty dish that is (like most South 
Indian dishes) simple, hearty, good eating.

Ingredients:
	
	Half a head of Cabbage, finely chopped.
	1/3 Cups unsweetened shredded coconut
	1/2 tsp Mustard Seed.
	1/2 tsp Yellow split peas
	2 Cloves Garlic, finely minced
	1/2 Schezhwan Red Pepper   (For the Hot food Fanatic)

The red pepper is strictly optional. I don't use it, though some people do.

Steam cabbage in a steamer. It should be almost completely cooked. I like
my cabbage crisp and chewy, so I usually steam it for about 10 minutes.

In a substantial skillet, heat 2 Tbs oil (Peanut Oil is preferred, but 
any Corn or Veg Oil is fine). After a few minutes, drop a mustard seed or two
in. As soon as it pops, add rest of mustard seed and Yellow split peas in
Reduce heat to Medium Low. KEEP SKILLET COVERED IF YOU DON'T WANT MUSTARD
SEEDS ALL OVER YOU. Then add garlic. Let this heat for a few minutes, then
add coconut, and turn heat down to Low. When the coconut is browned, add
the drained cabbage, stir and mix well, cover, and cook SLOWLY for a few
more minutes to allow flavor to permeate and cabbage to cook completely.
