I would like to pass on a warning I have received from several people
that Sabatier may have declined in quality as a knife maker, and to
be careful about buying knives labeled 'Sabatier'.  One person
recommended the Lion brand of Sabatier knives.  Thank you, all.

"Sabatier" knives are actually manufactured by several companies in France,
and do indeed differ in quality.  Often, price is a good (rough) guide to 
quality, but not always, since I bought my best chef's knife (Sabatier)
in JC Penny's for 7.98 3 years  ago!
