Scampi Grigliati con Erbe Vecchia Roma
(Grilled Scampi with Green Sauce)


For the Sauce: 1/3 cup lemon juice
               2 garlic cloves
               2/3 cup olive oil
               1/2 cup minced fresh parsley


Also needed:   3 pounds jumbo shrimp (about 24)
               olive oil

Make the sauce: 
      In a ceramic or glass bowl combine the lemon juice, garlic
      (minced), and slat and pepper to taste. Add the oil in
      a stream, whisking, whisk in the parsley, and whisk the 
      sauce until it is emulsified.
Cooking the shrimp:
      First shell,devein, and butterfly the shrimp.
      You can either saute the shrimp in olive oil over a 
      moderate flame(don't use too much olive oil) or
      thread four of the shrimp onto a skewer(six skewers
      needed), brush them liberally with olive oil, and season
      themlightly with salt and pepper. Arrange the skewers
      on a grill over hot coals and cook the shrimp for four minutes
      on each side, or until  they are opaque and springy to the 
      touch. 
Serving the shrimp:
      Remove shrimp from the skewers(or saute pan) and arrange in
      a heated serving dish. Place the sauce prepared on the shrimp
      and then enjoy!
