Here's a simple fried rice recipe that I've had some success with: ingrediants: 1 cup uncooked rice 0.25 lb. bacon 1 medium sized onion 1 bunch of green onions 1 egg 1 tsp. soy sauce Cook the rice ahead of time. This recipe also works great with leftover rice. I always use short grain white rice (Japanese rice). Slice the bacon, onion, and green onions into small pieces. In a large frying pan over medium heat: Cook the bacon and onions until the bacon is slightly crisp, and the onions transparent. Drain any excess grease. Add the green onions, then the rice. Salt and pepper to taste (usually just a few shakes of each are required). Heat in the frying pan, stirring occaisionally until the rest of your meal gets cooked. Make sure you stir the rice at the bottom of the pan, since it has a tendency to stick if left unattended. When you're ready to serve: Beat the egg in a separate bowl, and mix in the soy sauce (to the egg, not the rice). Then JUST BEFORE SERVING, add the egg, and mix with the rice. The egg adds a little flavor, but is mostly for texture, so don't add it until you're ready to serve, or it will loose its effect. Makes enough rice for 2-3 hearty appetites. Makes a nice dinner with some barbecued pork or chicken, and perhaps a green vegetable (I often have steamed broccoli). I usually allow myself around 30 minutes (not including the time to initially cook the rice) to get this dish ready to serve.
