[net.cooks] Hot Oil

For those of us who can't find "hot oil", as called for in Hot and Sour Soup
and other recipies, I've just found...

				Hot Oil

Heat 1/3 c. vegetable oil in a small pan. When it starts to smoke, stir in
2 Tablespoons crushed hot red pepper flakes or 3 Tablespoons powdered hot red
pepper.

I'm sure that works. If you're interested, however, in a
Chinese cooking class I took a few years ago I was told to
make hot oil in the same way, but using peanut oil and
Chinese dried hot peppers. The peppers are used whole, and
discarded after the oil is ready.
