[net.cooks] Eggplant Parmesan

You start by peeling the Eggplant and slicing it (3/8" slices).
Next you salt each slice and place them in a strainer, and let them sit there
for approx. 15 minutes (this takes the bitter flavor out of the Eggplant).
While this is going on, you may spend your time preparing a mixture of
eggs condimented with the likes of Garlic, Parsley, Oregano, Parmesan Cheese,
Salt, Pepper and other condiments (be creative).
Rinse the Slices and soak them in the Egg mixture. 
Bread the slices and fry them (deep frying is OK).
You now have the basic ingredient for Eggplant Parmesan; all you need now
is some sauce (spaghetti or pizza will do), the cheese of your preference
, mix to your taste and bake.
