In response to decvax!duke!phs!jac request for something appropriate to take to a bridal show, below is a VERY simple, but delicious, recipe for Date Balls. DATE BALLS 2 well-beaten eggs 1 cup brown sugar 1 1/2 cups dates, chopped fine 1/4 tsp. salt 1 tsp. vanilla 1/2 cup chopped candied fruit (or chopped glacee cherries) 1/2 cups chopped nuts 1 1/2 cups Rice Krispies (toasted almonds are best) 1 cup shredded coconut (to coat the date balls) Mix the eggs, brown sugar and dates in a large pot. Cook over medium heat, stirring constantly, for about 10 minutes. (The mixture will look foamy and light brown; the dates will have pretty well dissolved.) Remove the mixture from heat and stir in the salt and the vanilla. Add the fruit, nuts and Rice Krispies, and mix well with a wooden spoon. Allow the mixture to cool for about 10 minutes, or until it is comfortable enough for you to work with. Form the mixture into 1" balls, and roll each ball in the shredded coconut to coat the surface. The recipe yields approximately 50 balls. Store in the freezer covered with plastic wrap. Phyllis Eve Bregman decvax!utzoo!phyllis
