I grew up on the South Side of Chicago ( Yes, just like Leroy Brown.........) and remembered getting hot dogs from a variety of pushcarts. Typically these little carts were strictly one person operations and the condiments that were placed upon the sausages varied somewhat from cart to cart. Somehow these hot dogs tasted different from most other hot dogs and it wasn't until I was a teenager that I realized the "secret". Below is the recipe for the "Hacker cook" ( described yesterday ): Cook the hot dogs any way you want ( Use yesterday's recipe for microwave hot dogs or put the wienies in boiling ( hot with bubbles coming up ) water until they plumb ( puff ) up). Place the hot dog lengthwise in the bun and put on condiments in this order, mustard, pickle relish, sport peppers ( optional ), onions, and end up with some wedges of tomato on top of the bun. Now comes the SECRET -- give a generous sprinkle of celery salt and make sure a lot of it gets on the tomato wedges. Maybe wrapping them up in some waxed paper may kind of steam in the flavor of the celery salt into the tomato and bun. However you do it, eat the sandwich before it gets cold. This technique also works well with Polish sausage and smoky links. Enjoy! Chuck Young at ihnss!ihuxi!cjy
