Onion Cheese Tart
Ingredients
1 9 inch unbaked pie shell
3-4 large onions
2 Tbl butter
1/4 lb finely grated Swiss cheese
1/4 lb finely grated cheddar cheese
2 Tbl flour
2 eggs
11/2 cups light cream
1 tsp salt
1/2 tsp Worcestershire sauce
1/4 tsp freshly grated black pepper
2 Tbl freshly grated Parmesan cheese
Preheat oven to 400o . Peel onions and slice thinly. Saute
until golden but not brown in the butter. Cool slightly and
spoon them into a pastry lined 9 inch pie plate. In a bowl
toss the Swiss and cheddar cheese with the flour. Beat the
eggs well and stir in the cream, salt, Worcestershire, and
the pepper. Spoon the cheeses over the onions and pour the
egg mixture over both. Sprinkle the Parmesan cheese over
everything.
Bake for 20 minutes. Lower heat to 325o and bake for 20-25
minutes longer. Knife in center should come out clean.
Cool on rack for 10 minutes before serving. Serve in small
wedges.
