Old Ox Potato Skins
4 or 5 baked potatoes
Oil for deep frying
Seasoned salt or salt and pepper
1 cup shredded Cheddar Cheese
5 slices bacon, cooked and crumbled
2 tablespoons finely chopped green onions
Cut baked potatoes in halves lengthwise. Scoop out
Potato flesh, leaving about 1/4-inch shell. Cook skins in
hot deep oil heated to about 400 degrees, 3 to 5 minutes
until golden brown. Drain on paper towels. Season to
taste with seasoned salt. Fill each potato half with some
of the Cheddar, bacon and green onions. Brown under
broiler until cheese melts, 2 to 3 minutes. May be served
with sour cream or any desired creamy dressing. Makes
8 to 10 servings. [unless you're really hungry...]
