Cream Cheese Fruit Pie Ingredients for Cream Filling 1 small package of cream cheese 1/2 cup powdered sugar 1/2 tsp vanilla 1/2 pint heavy cream 9 inch baked pie shell Method Mix until smooth and creamy the cream cheese, the sugar, and the vanilla. Whip the cream and fold the cheese mixture into the whipped cream. Pour into a baked 9 inch pie shell. Chill while preparing fruit. Ingredients for Fruit Filling 2-3 cups cleaned berries -- strawberries, raspberries, cherries, or whatever you like water cornstarch sugar Method Crush 1/2-3/4 of a cup of the berries, add a little water, and sugar to sweeten. Bring mixture to a boil in a saucepan and cook over low heat. Add a very thin cornstarch mixture and continue cooking and stirring until mixture thickens and clears. Cool this glaze. Arrange the rest of the fruit neatly on top of the cream in the pie shell. Pour the cooled glaze evenly over the fruit. Chill the finished pie for 4 hours. Notes Canned pie filling may be used. The glaze need not be thickened very much because it will thicken further as it cools. The total of crushed fruit, sugar, and water for the glaze before cooking should be about one cup. If necessary, the fruit to go in the pie could be lightly sweetened. This pie freezes well and should be served after freezing while still just barely unfrozen.
