                       Kheer -- Indian Rice Pudding

       Ingredients

       1/2 cup     rice
       2 qts       milk
       4 pods      cardamom
       1/4 cup     sugar

       Method

       Bring the milk to a boil and simmer it until it reduces to
       about 2/3 its original volume.  A non-stick pan is good for
       this and the milk must be stirred and watched constantly to
       avoid sticking.  Add the rice and simmer until the rice is
       soft, approximately 15 minutes.  Add the sugar (more or less
       than 1/4 cup according to taste) and the cardamom.  Cool and
       serve.

       Notes

       Slivered almonds are often added to this recipe in
       moderation.  This version comes from Indu Gehani; she says
       she cooks it by feel rather than from a recipe and that
       experimentation is in order.
