Chicken with Apples
Ingredients
2 Tbl butter
2 Tbl cooking oil
3 lb frying chicken cut in pieces
2 medium-to-large apples peeled, cored, and cut in eighths
1/4 cup chopped onion
1/2 cup chopped peeled apple
1/3 cup cider vinegar
1/3 cup chicken stock
1/3 cup heavy cream
salt and pepper to taste
Method
Heat the butter and oil in a large skillet. Wash and dry
the chicken, season with salt and pepper, and saute until
nicely browned. Do in two batches to avoid crowding if
necessary.
Remove chicken from skillet and set aside. Over medium heat
saute the apple pieces until lightly browned and barely
tender. Remove from skillet.
Add the onion and chopped apple to the skillet and saute
until tender. Pour off any excess fat. Add the vinegar and
chicken stock, bring to a boil, and scrape pan to make a
sauce.
Return the chicken to the pan along with any juices from the
holding plate. Baste briefly with sauce, lower heat, cover,
and simmer for 20-30 minutes until chicken is tender.
Remove chicken to serving dish and keep warm. Stir the
apple pieces in the sauce to rewarm them and arrange around
the chicken in serving dish. Stir the cream into the sauce
in the skillet, simmer briefly, and pour over chicken and
apples. Serve at once.
