Chinese Broiled Chicken Ingredients 1/2 cup soy sauce 1/2 cup water 1 Tbl cooking oil 1 tsp sugar 1 Tbl sherry or sake (optional) 1 Tbl chopped fresh ginger 2-3 cloves chopped garlic 1/2 tsp coarse ground black pepper 1/2 tsp dry mustard 1 frying chicken cut up Method Combine all the ingredients except the chicken to form a marinade. Marinate the chicken for at least 4 hours. Broil chicken using the marinade for basting. Notes The marinade can also be used for a roasting chicken. Put the chicken and the marinade in a plastic bag (leakproof) and let sit for at least 4 hours. Make sure the entire chicken is wetted thoroughly. Bake chicken for 40-60 minutes (until done) at 325o . Baste chicken while baking with marinade. This marinade also works for pork chops or boned pork tenderloin. Grill or broil the pork.
