can you bake carrots so they come out cooked and soft? I tried to bake some with chicken tonight - for about an hour - but they didn't come out cooked! I had anticipated soft, baked carrots where it took on the flavor of the chicken and gave flavor to the chicken.

I would have thought that carrots can be baked the same as any other root vegetable, so I am wondering what went wrong. I do know that they cook very quickly if stir fried in a reasonably hot wok. Perhaps they could be wrapped in foil with a little butter for baking. Anyone ever do other roots besides potatoes in the oven by themselves? John Winterton
