[net.cooks] Experiments with Chicken Breasts.

jcwinterton (08/10/82)

On an inpulse, the other day, I bought two whole chicken breasts. When
I got home, I wondered what had come over me, but I persevered with this result:
			Chicken Breasts wrapped in Bacon.

2 whole chicken breasts (not split), about 650 g.
	fresh ground pepper
	thyme
	10 strips smoked bacon

Grind some fresh pepper over the inside of the washed and dried
breasts. Dust with ground thyme (and add a little sage if you want,
which I did the next time). Wrap the breasts in the bacon strips
attaching with skewers or string to make a tight package (but with
	room for steam to escape).
In a pre-heated hot oven, put the breasts on a high rack (broiling
rack is what I used), and cook for half an hour. Reduce to medium
heat, turn the breasts over, and cook an additional half hour.

	Enjoy.
	John Winterton.

P.S. Use lower element in the oven, not the top one.
